We buy only fancy whole cashews for this treat!  To keep them from breaking,  we hand coat these babies in small batches.   Our coating technique leaves less sugar crumbs on the bottom of the jar and more clinging to the cashews than other coating processes.  And isn't that just what you were hoping for?
